The fall has arrived and with the season comes apple and pear season. We all know about baked apples, but what about baked pears? I have been making these wonderful baked pears for many years now and thought I would share the recipe for this unbelievably wonderful dessert with my foodie friends
- 8 small ripe but firm pears – Bosc or Anjou
- 2 tablespoons fresh lemon juice
- 1 cup Marsala
- 1 tablespoon butter, cut into small bits
- 3 tablespoons light brown sugar
- ¼ teaspoon cinnamon
- ¾ cup crushed amaretti cookies
Peel the pears trimming the bottoms so they will stand up. Drizzle the pears with the lemon juice and set in a shallow baking dish, pour the Marsala over and around the pears. Scatter the butter over them. Mix together the sugar and cinnamon and then sprinkle the pears with the mixture. Finally sprinkle the pears with the amaretti cookie crumbs.
Bake in a 350 degree oven for 50 to 60 minutes, basting with the juices in the pan 3 or 4 times, or until the juices are slightly thickened. Serve the pears warm or at room temp with the pan juices spooned over them.
